This flavor was inspired by Kodiak’s Saltery Cove, a place known for bright summer runs and the kind of sockeye that practically glows in the water. A jerky that carried a little of that warmth with it.
Sockeye delivers a bold, classic salmon flavor with a firm texture and lower oil content than King or Coho. The flesh is dense and clean, holding its shape well when cooked and offering a deeply satisfying bite. Smoking deepens Sockeye’s character, transforming the flesh into a striking mahogany red.
Thick slices of wild sockeye are marinated in a sweet sesame blend, then smoked and dried just enough to keep a soft, tender bite. It’s savory, a little sweet, and full of that naturally rich sockeye character.
Eat it straight, or chop it into small pieces and toss it into a warm bowl of rice or noodles for a quick burst of smoky-sweet flavor.
