Salinity works with two wonderful small oyster farms to the north & east of Whidbey Island. Together they provide an amazing variety of oysters for you to make an "oyster flight" for your dinner next party. Compare 3 different oyster species, 2 different growing methods, and 2 bays with different salinity (salt) levels and different oyster-food compositions. This all creates what we call the merroir of the oyster, a French word describing the taste of a place.
Swinomish Shellfish is The Swinomish Tribe's farm in Similk Bay off Fidalgo Island. Similk Bay is a medium salinity bay with impeccable water quality, very rich in nutritious phytoplankton for the oysters to eat. These oysters get remarkable depth of flavor from growing in bags directly on their pristine beach. Tumbled periodically by hand-shaking the bags. Species available: Olympia oysters (Ostrea lurida), Pacific oysters (Crassostrea gigas), and [coming back next year] Kumamoto oysters (Crassostrea sikamea).
Skagit Shellfish farms their oysters and soft-shell clams in Skagit Bay by Camano Island. Due to fresh water influx from the nearby Skagit River, their oysters have a remarkably low salinity level. And since these oysters are grown in bags with no ground contact, you can truly taste the oyster by itself! Tide tumbled for fatter meats and smooth, rounded shells, making them very easy to open. Species available: Pacific oysters (Crassostrea gigas), Kumamoto oysters (Crassostrea sikamea), and [coming next year] Olympia oysters (Ostrea lurida).
