Ingredients to get through Salinity:

  • 1 dozen Oysters, fresh & still in the shell (keep in fridge)

Ingredients to get elsewhere:

  • 3/4 cup porter or Irish stout
  • 1/4 teaspoon freshly ground black pepper
  • 1 teaspoon lemon zest, plus more for garnish
  • 1 medium shallot, finely diced (about 2 tablespoons)
  • 1 tablespoon finely chopped fresh parsley leaves
  • Malt vinegar, to taste
