This is the cultured (fermented) version of Mt. Capra’s goat milk ghee. The cultured goat ghee has probiotics added to the cream before it is turned into butter. This is the traditional way to make ghee! Yummy depth of flavor added. Probiotics may not survive the simmering clarification process.
Ghee is clarified butter from pastured, grass-fed goats. Contains the essential fatty acid known as Conjugated Linoleic Acid (CLA). Mt. 100% Goat Milk Ghee starts as fresh goat milk harvested from Mt Capra's own grass-fed, pastured goats on their farm in the Pacific Northwest (Chehalis, just south of Olympia, WA). It then passes through a cream separator which extracts the cream from the milk using no chemicals. They then churn the cream into butter which is then gently simmered for several hours while the remaining milk solids, protein, and lactose are removed, leaving behind a pure goat milk butter oil.
Ghee from goat milk is more white in color than yellow (like cow milk ghee) – this is due to the goat’s ability to convert carotenes from grass into the preformed vitamin A, which means less work for you! It's also higher in MCTs and generally easier to digest for most people.
Ghee is a natural food product and so natural variations from batch to batch should be considered normal. At this time we do not filter the ghee so sometimes small patches of darker brown solids will be seen at the bottom of the jar. This is totally normal. This is a natural food product and may exhibit slight color, taste, and density variations from batch to batch.
Use: Ghee has a delicious buttery aroma and flavor. It has a smoke point of (485 degrees F) and is completely shelf-stable (unlike regular butter, which has a relatively low smoke point should not be used to cook at high temperatures). Use as a spread in place of butter or in place of cooking oil in sautés or baked goods.
Note: Use a clean, dry utensil each time you remove ghee from the jar. While clarified butter is shelf stable it will quickly grow mold if bacteria or food particles are introduced into the bottle.
