Wild-caught Sockeye Salmon sustainably caught and flash-frozen at sea in Southeast Alaska. The salmon is hot-smoked over alder wood at Seabolt’s Smokehouse on northern Whidbey Island. Salmon Candy is dry rolled snack-size pieces of Sockeye using a sweet cure for 18 hours, and then alder smoked for 6 hours with brown sugar, salt, and spices in a sugar to salt ratio of 4:1 (compared to the regular smoked salmon cure which is 1:1).

Shipping: This is a perishable item. It will be kept at freezer temperatures until it reaches you. It must be shipped overnight (UPS Next Day Air nationwide, or UPS Ground within Washington State). All items ship on Thursday (order deadline: Sunday at midnight). Local delivery or in-store pickup on Whidbey Island on Fridays (order deadline: Sunday at midnight).
