Wild-caught Sockeye Salmon sustainably caught and flash-frozen at sea in Southeast Alaska. The salmon is hot-smoked over alder wood at Seabolt’s Smokehouse on northern Whidbey Island. Salmon Candy is dry rolled snack-size pieces of Sockeye using our sweet cure for 18 hours, and then alder smoked for 6 hours with brown sugar, salt, and spices in a sugar to salt ratio of 4:1 (compared to the regular smoked salmon cure which is 1:1).
